Juniper Berry Spice Rub

Grilled Rack of Lamb with Palette’s Juniper Berry Spice Rub
- 2 whole French racks of lamb ( with 6 chops on each)
- Palette Fine Foods Juniper Berry Spice Rub
Spread a generous amount of Palette’s juniper Berry Spice Rub in a plate or bowl. Dredge all sides of lamb rack with the rub. Heat grill or BBQ to high heat and sear rack on both sides and end until browned. Reduce heat and cook to desired doneness. This can be done on the grill or in the oven at 400F. Remove the lamb from oven and let rest 10 minutes before carving off each rib. Serve topped with Palette’s Purple Basil Jelly. Serves 4.
