Lavender Citrus Spice Rub



Lavender Citrus Salmon

  • Dip a piece of salmon or sea bass in enough rub to cover 1 side.
  • Saute fish other side down for about 3 minutes then bake in 400 F oven for about 6 minutes until cooked through.
Lavender Citrus Crusted Halibut
Serves: 6
Ingredients:
  • 6 (4 oz) boneless, skinless fillets of Halibut ( sole, cod, or red snapper also work very well)
  • 3 T vegetable (canola) oil
  • Lavender Citrus Spice Rub
Procedure:
  1. Spread a generous amount of Lavender Citrus Spice Rub in a plate or bowl.
  2. Dredge all sides of tuna with the rub.
  3. Heat oil to near smoking hot, sear fish on both sides to caramelize (brown) crust.
  4. For thicker pieces reduce heat to allow it to cook through without burning.
  5. Serve immediately.


Lavender Citrus Crusted Tuna
Ingredients:
  • 2 large boneless pieces of Tuna (300g each)
  • 3 T vegetable (canola) oil
  • Lavender Citrus Spice Rub
Procedure:
  1. Spread a generous amount of Lavender Citrus Spice Rub in a plate or bowl.
  2. Dredge all sides of fish fillets with the rub.
  3. Heat oil to near smoking hot, sear fish on both sides to caramelize (brown) crust.
  4. Slice into medallions to (reveal rareness), serve with golden raspberry dipping sauce (see recipe) or a ginger flavored reduction.
